I can’t think of a single person who doesn’t enjoy a good muffin. . . muffin with coffee in the morning is just about as perfect as it gets. These Blueberry Streusel Muffins are absolutely out of this world moist and delicious. Let me share the basic sweet muffin recipe with you and then YOU can add whatever fruit combo YOU enjoy!
Blueberries are wonderfully abundant this time of year in NW Montana and the family and I have been picking multiple times a week.
We are fortunate to have a U-pick blueberry farm just down the road and the kids love running through the rows, playing hide and seek, basking in the shade, snacking on the ripe berries and OCCASIONALLY adding a few to the bucket.
We love to eat FRESH berries but one of my favorite recipes to make featuring blueberries is Blueberry Muffins. They are so easy, moist – but not not too sweet and OH SO DECADENT.
Here is what you will need to make Blueberry Streusel Muffins:
For the Muffin
- 2 cups of flour
- 1 cup of sugar
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1 cup of milk
- 1/3 c. melted butter
- 1 egg
- 1 tsp. vanilla
For the Streusel Topping
- 1/3 cup softened butter
- 1/4 cup sugar
- 1/2 cup flour
- 1/2 cup oats
- 1 tsp. baking powder
- pinch of salt
Let me guide you step by step in the process of making Blueberry Streusel Muffins
Preheat oven to 400 degrees
In a large bowl, combine flour, sugar, baking powder, salt and cinnamon and set that to the side.
In a smaller bowl, combine, milk, butter, egg and vanilla. Give it a slight whisk with a fork.
Pour milk mixture into dry ingredients. Stir quickly just until dry ingredients are moist. Don’t over-stir.
Gently fold in fruit.
The Streusel Topping is absolutely OPTIONAL for these Blueberry Muffins BUT I really think you should add it. . . Trust Me!!
To mix up the topping – add butter, flour, oats, sugar, baking powder and a pinch of salt to a small bowl.
Mix well with a fork (or fingers) until the mix comes together into coarse crumbles.
You may need to add just a bit more flour depending on the day!
Spray a muffin tin or parchment cupcake liners with a light layer of cooking spray. Fill the tins or cups halfway with muffin batter. Don’t overfill because you still need to add a GENEROUS sprinkle of streusel.
Top with streusel topping. (as much as you like) – Go ahead lay it on THICK!!
Bake those Beautiful Blueberry Streusel Muffins!
Bake 20-25 minutes. Let cool for 3 minutes and ENJOY!
I PROMISE you. These are the BEST MUFFINS you will ever eat!
