Pumpkin, pumpkin – all things pumpkin. This time of year we enjoy pumpkin everything. Pumpkin sweet, pumpkin savory . . . Today I have pumpkin chili in the InstantPot and I am snacking on Homemade Sweet & Salty Toasted Pumpkin Seeds. No part of the pumpkin goes to waste ’round here and these seeds are such a delicious and HEALTHY snack. Let’s make some!
Sweet & Salty – The perfect flavor combo!
There is just something about the contrast of sweet & salty that just WORKS! I love salty snacks but a touch of sweet just takes it over the top. Pre-cooking these seeds by boiling before roasting results in a perfectly tender, crisp pumpkin seed.
The combination of sweet & salty in this snack is truly delicious.
What you will need for Sweet & Salty Toasted Pumpkin Seeds:
- 3 cups of Pumpkin Seeds (Washed)
- 4 cups salted water for boiling
- 2 Tbsp Honey
- 1 tsp of garlic powder
- 2 tsp Seasoning Salt
- 2 Tbsp Olive Oil

How to make Sweet & Salty Toasted Pumpkin Seeds:
- Preheat oven to 400 degrees F.
- Bring salted (approx 1 TBSP salt per 4 cups water) to a boil.
- Rinse pumpkin seeds, in cold water and removing any bits of pumpkin flesh.
- Place pumpkin seeds in boiling water and let simmer for 15 minutes.
- Pour in colander and drain well – pat dry with paper towel.
- Drizzle with olive oil & honey and toss well.
- Spread seeds out in a single layer on parchment lined baking sheet.
- Sprinkle on garlic powder, seasoning salt or just plain sea salt (garlic salt, Johnny’s salt, alpine touch are all great choices.)
- Roast for 10 minutes at 400 degrees, given seeds a stir and toss then roast for another 5-10 minutes until brown and toasty.
- Watch close they can burn easily.
- Remove from oven and let cool.
- Store in airtight container to keep crisp.
Add a little SPICE to really up the flavor of these seeds.
Add a pinch of chili flake or a a sprinkle of Cajun Seasoning for a little SPICE with your sweet & salty toasted pumpkin seeds!

These pumpkin seeds are a easy, healthy snack. Sweet with a touch of honey and salty with sea salt. . . they are an addictive treat. Roast those pumpkins, carve them for Halloween but save those seeds.
