I have all kinds of bread recipes that I really enjoy and sourdough baking is one of my favorite activities. BUT not everyone (including me) can consume lots of carbs on a daily basis.

I like to have carb swap ideas and recipes in my back pocket for days and times when I want to eat (and feel) a little lighter.

These little crusts are so flavorful and easy to make. You won’t even miss the bread. Part of what makes them so easy is that they cook up super fast in a 3 inch waffle iron. No need to heat up the oven at all.

They bake up nice and crisp – sturdy enough for use in a sandwich or as a pizza crust. You can save them for later in the refrigerator or freezer and re-crisp them up back in the waffle iron when ready to eat!

What You will Need to Make Cauliflower Bread or Crust Replacement

  • 2 cups of cooked shredded/drained cauliflower
  • 1 cup parmesan (or shredded mozzerella)
  • 1 beaten egg
  • Seasoning as desired (S&P, oregano, basil etc.)

How to make Cauliflower Bread or Crust Replacement

These cauliflower crusts are really very simple to make. You need slightly cooked, shredded or “riced” cauliflower. You can purchase pre-shredded bags of cauliflower in stores these days. Feel free to use fresh or frozen.

OR you can make riced cauliflower yourself.

My favorite way to make riced cauliflower at home is by shredding raw cauliflower using a boxed grater.

Then lightly toast the cauliflower rice in a skillet on medium heat with just a bit of olive oil for just 2-3 minutes.

You CAN boil the cauliflower and mash it but it tends to be to wet and results in a soupy rice.

Once you have cauliflower rice prepared and cooled add it to a large bowl or into a food processor with cheese and egg.

Make sure cauliflower is cool and strained of all liquid.

NOTE: Add pinch of salt and seasonings such as oregano or basil as desired. 

Spray a 4in waffle iron with cooking spray and allow to heat up. 

Add 1/2 of the mixture to the hot waffle iron.

Cook for approximately 5 minutes or until nicely browned. 

Remove from waffle iron, spray the iron with non-stick spray again and add the rest of you batter. 

Remove both crusts and use as you like. (Sandwiches, Pizza – whatever you like!)

Ways to use Cauliflower Bread or Crust

Use your cauliflower crust/bread slice in so many delicious ways!

  • Sandwiches – open faced or use both crusts/slices
  • Make a scrumptious healthier toasted cheese
  • Cheesy “bread” – toasted with a sprinkle of fresh herbs
  • Use them as “buns” for cheeseburger, chicken, veggie or fish burger.
  • Personal Pizza with any manner of delicious toppings of choice

The addition of a pinch of basil and oregano to the cauliflower mix makes a super flavorful pizza crust.

How to Store Cauliflower Bread Crust for Later 

If you would like to safe your crusts for later, place them in an air tight container with parchment paper or wax paper in between each slice. Use within 7 days.

Altrnatively place the cauliflower crusts in the freezer and use within 1-2 months.

Crusts will get soft when refrigerated or frozen so reheat and use as below:

To Reheat: Remove from refrigerator or from freezer and thaw slightly. Heat up waffle iron again and spray with non-stick spray. Add waffle back and cook/toast until crisp.
