When I first heard of Coconut rice I was a little skeptical. This just didn’t seem like a good flavor combo to me but boy was I wrong.

The addition of the coconut milk to cook the rice in (instead of broth or water) makes the rice super flavorful and creamy too.

This Coconut Lime Rice is perfectly creamy, soft and only slightly sweet. The fresh, tangy flavor of the lime zest makes this dish sooo good. As if that all wasn't good enough - this is a super simple and fast Instant Pot Recipe too.

A friend suggested we add the lime zest at the end and boy was she right. When pared with my Healthier version of Mongolian Beef, this rice was gobbled up by adults and kiddos alike.

Do you have to use an Instant Pot?

No you don’t BUT an Instant Pot makes cooking rice a breeze. I’m not a huge kitchen gadget person but an Instant Pot has definitely won me over.

To make this recipe on the stovetop you would use the same ingredients just bring the coconut milk, water and rice to a simmer and cook, lid on – on low to medium heat until the liquid is absorbed and rice is tender.

What you will need to make this Instant Pot Coconut Lime Rice

  • 14 oz full fat unsweet coconut milk
  • 14 oz water (just use the can)
  • 1 1/2 cup jasmine rice
  • 1 tsp salt
  • 1 tsp honey

How to make Coconut Lime Rice

Okay this is so easy it’s barley a recipe.

Simply dump all ingredients in an Instant Pot. Give it a stir and set to pressure cook 5 minutes at high pressure.

Once the Instant Pot is finished, release pressure and fluff rice.

Keep warm and add 2 tsp fresh lime zest when ready to serve.
